Before I gave birth, I stocked my deep freezer with tins and tins full of dinner. I made enchiladas, lasagnas, casseroles, mechshes, muffins, stocks, and more. One thing I did not have, though, was fresh veggies and salads. And after a few weeks of eating comfort food, well, I really just wanted a salad. Good thing we have friends and family who, despite seeing the contents of my freezer, rang my doorbell with freshly cooked dinners and tins of ready-to-bake ones, as well as side salads and some fruit for dessert. It’s fall! And fall means winter squash! Wait… huh!? I guess it’s fall squash. Well, it’s not zucchini and yellow squash! It’s so much better.

Acorn squash is great, because it’s like a bowl! It’s nice and round, unlike its cousins delicata and butternut. So it’s often stuffed. Here, I stuffed the squash with kale and chick peas, along with a little bit of homemade tomato sauce. Continue reading

Roasted Vegetable Soup

Fall is here! That means butternut squash and soup weather. Now, I know we always share butternut squash soup recipes with you, but this one is different. This one also has roasted sweet potato and carrot. And coconut milk! Perfect for the rainy and gross weather today.

This is also one of the easiest soup recipes ever. No chopping and stirring, no waiting for the onions and garlic to brown and adding dashes and pinches of things. Just place vegetables in the oven and forget about them until a timer beeps. Then blend it all together. That’s it. It’s delicious and refreshing, and perfect for the cool fall days! Whole Wheat Cabbage and Mushroom Galette

I’m not really sure why I bought savoy cabbage, but I did, so I had to make some dinner with it. I originally wanted to roast it in wedges and serve it with the leftover sausage from this salad, but I ended up using that for something else. Apparently people make galettes with savoy cabbage, so that’s what I decided to do!

These lentils are easy to make, can be made in advance, and are super healthy! Score! You can definitely just chop all the veggies and then throw everything together while preparing a different dish. It’s a great Sunday activity. For some reason, this Ina recipe was never on her show (according to the Food Network site), but it is in one of her cookbooks, which I own, and you can also find it online on her website. Claudette's Granola This isn’t the first granola recipe we’ve posted. And it definitely won’t be the last. But hey, there are tons of ways in this word to enjoy granola. In a bowl with milk, on top of yogurt, in a parfait, as an ice cream topping, plain as a snack, mixed with apples and thrown all over your kitchen floor…wait, that one isn’t so enjoyable. But you get the idea. Granola is a staple in our kitchens and it should be in yours, too. If not because the blend of oats, nuts, and fruit is good for you and an easy, homemade, and unprocessed snack, then because it makes the entire kitchen (and house) smell amazing as it bakes!

Couscous with Greens and Tomatoes

I really like couscous, but it can get very boring. So I decided to layer it with some healthy stuff and make it sorta like a lasagna. I thought it was a hit! And so did Richie, who ate two bowls of it for dinner.

I was inspired to make this dish when my friend Danielle told me about a great couscous dish her mother made. Her ingredients were pretty much the same, but she used canned tomatoes and mixed everything together, more like a traditional couscous. When Danielle called it a couscous lasagna, I knew I had to try it. Plus, I’m on a healthy greens kick, so I was excited to use kale and spinach in the same dish. Continue reading

Spring is here! And spring means asparagus is in season. No more boring roasted or grilled asparagus, we’re going gourmet here. Now, gourmet doesn’t mean hard. Actually, while there are a few steps in this recipe (you should read it over once before actually attempting it – you’ll need to do a bit of juggling), it’s quite easy! and impressive looking.
