The one food I would want if stranded on an island would be this peanut sauce recipe. Seriously.

I cannot believe it has taken me this long to share this recipe with you! Really, I probably make this salad once a week, if not more. I actually started tripling the dressing just so that I don’t have to make it so often…I love cooking and baking in advance and getting ready for super easy weeknight dinners, especially now that I have a job and two kids. It is definitely a desert island recipe for me. I usually make it over spiralized cucumbers, but it is really quite versatile. You can use it as a dipping sauce for baked tofu, make noodles with it and add sesame seeds. The list goes on. Continue reading

Homemade Cashew Milk

Chag Sameach! We are back here and back to blogging after a busy busy few months and a little blog hiatus. We have still been active on Instagram, though. And have actually been cooking, and even photographing some recipes. And now we will catch up with those. I have a confession to make: We made this a LONG time ago. Probably in June, actually. Better late than never, right?

Some news: We just moved into a new house! With a double wall oven, five burner stove, and two dishwashers! Plus, no more green counter tops and yellow walls; I have black granite and three skylights in my kitchen! I cannot wait for the food photos in my new kitchen. Steph wants to start off by making me bake cronuts for her, but I’m open to ideas and suggestions from everyone else.

But for now, I will give you an amazingly delicious and simple recipe that we made together this summer. In my favorite kitchen gadget, my Vitamix! It’s amazing for making nut milks, but really if you have just any old blender, cashew milk is the best kind of nut milk to make. Cashews are very soft and will blend well. Because of that, the milk from them is super creamy and silky. Also, cashews are cheaper than almonds, so really this is a great substitution.

Ever since buying a spiralizer a few weeks ago, I’ve made sure to use it a few times a week. I’m usually boring and just make the same cucumber salad with it, but recently I’ve decided to leave my comfort zone and try out different veggies and combos with it. This month’s linkup is all about drinks! Cocktails (and mocktails) to serve at your next party. Well, I’m all about my Vitamix these days, and while I could easily whip up a frozen margarita, I am more into making healthy smoothies and drinks. You can add vodka to this if you like, or really anything to make it more of a cocktail. It’s a wonderful drink that quenches thirst and fights cancer! That is, as long as you can crack open that young coconut.

Lentil Bolognese

Growing up, we always ate spaghetti and meatballs on Monday nights. It’s not like we had a weekly dinner rotation or anything, that was just Monday night dinner. And we loved it. That was before “Meatless Monday” was a thing, anyway. Before I gave birth, I stocked my deep freezer with tins and tins full of dinner. I made enchiladas, lasagnas, casseroles, mechshes, muffins, stocks, and more. One thing I did not have, though, was fresh veggies and salads. And after a few weeks of eating comfort food, well, I really just wanted a salad. Good thing we have friends and family who, despite seeing the contents of my freezer, rang my doorbell with freshly cooked dinners and tins of ready-to-bake ones, as well as side salads and some fruit for dessert. Stewed Lentils and Tomatoes

These lentils are easy to make, can be made in advance, and are super healthy! Score! You can definitely just chop all the veggies and then throw everything together while preparing a different dish. It’s a great Sunday activity. For some reason, this Ina recipe was never on her show (according to the Food Network site), but it is in one of her cookbooks, which I own, and you can also find it online on her website. Mushroom and Spinach Rice

Richie loves rice. So I try to make him rice in lots of healthy ways. I like adding veggies, cooking it in vegetable broth, adding an egg at the end for some protein. And of course I use brown rice. Rice is such an easy side dish, so I started trying to make it more often. It’s pretty cheap, can be brightened up in quite a few ways, and again, Richie really really likes to eat it. Eating it with a fried on top just means it’s a full meal for one of those really lazy weeknights. You have all your food groups right there! Vegetables, carbs, and protein. Plus the added deliciousness of the runny egg yolk mixed in makes it exciting enough to call dinner.  Continue reading

Portobello Mushroom “Pizzas”

Pizza is probably my all-time favorite food. I mean, what’s not to like? But sometimes I like to get creative with my pizzas. And maybe a little bit healthier. So this time, I wanted to make pizza that was made out of only vegetables. And it really worked, except that I had to add a little sprinkle of cheese on top, because cheeseless pizza is really not pizza at all.
