Salmon with Asparagus and Shiitakes

I love pouch cooking. Why? Because it’s easily prep-able in the morning, and you can just pop it in the fridge till you get home after a long day of school/work/errands and put it in the oven right before dinner. It makes cooking dinner a breeze! Also, it’s a everything you need for dinner…protein from the fish, veggies mixed in, and usually I add some kind of carb or grain. This time I didn’t, but served it with couscous (takes only 5 minutes to cook), so dinner was ready in no time. Also, individual portions make it harder to eat too much for all those people on diets or doing P90X.  Continue reading

Spicy Tuna Burgers – August Kosher Linkup

A few years ago, I bought a meat grinder. I was excited to grind my own meat and make burgers and meatballs all the time. Turns out, I didn’t use it much. I don’t really eat that much meat, though I did make these amazing brisket burgers. Then I realized that I can use it for things other than just ground meat. Tuna! Salad Nicoise

Sometimes, the best lunch is just a big giant salad. But not just a boring lettuce and veggies salad, a delicious one with tons of protein, carbs, veggies, and lots of flavor. So when my mom was having company at the pool, I decided to do just that. A giant salad for lunch. It was easy to make, though it took a while to do all the steps, and was definitely worth it. For dinner I would sear tuna steaks, but for lunch, 2 cans of tuna is perfect.

Sole with Almonds and Panko

We’ve never made sole for you before. Not that you can’t do this with another fish, but the recipe called for sole, and the supermarket has some frozen wild caught kosher sole, so I decided it was fate, I had to make a sole recipe to share with everyone. This is an easy meal, especially if you have fish in the freezer. I loved the sweet and salty taste of the crumb mixture! Sometimes, I just like to have a light dinner, and this fits the bill. Serve it with your favorite vegetable side dish, and that’s dinner!

Soy Sauce Tilapia

Frozen tilapia is a good go-to dinner. You know, on those days that you just don’t have time to make something fancy, but still want a healthy dinner? Make this over some rice and serve with a small salad and you have a full meal in very little time. The original recipe called for striped bass, but I only had tilapia on hand, so I made it this way and loved it. Now I do it like this all the time. When I don’t have scallions, I just skip them. My husband is not a fan, anyway, but he loves the soft onions, so although they’re not a part of the original recipe, sometimes I make a swap. Continue reading

You know, I don’t really cook a lot of fish. Unless I’m having company, in which case salmon is my go-to main dish. Obviously, fish is a good dairy main dish for dinner parties, and it also makes a great centerpiece, because look how pretty that big piece of fish looks on top of that bed of root vegetables!
