I love pouch cooking. Why? Because it’s easily prep-able in the morning, and you can just pop it in the fridge till you get home after a long day of school/work/errands and put it in the oven right before dinner. It makes cooking dinner a breeze! Also, it’s a everything you need for dinner…protein from the fish, veggies mixed in, and usually I add some kind of carb or grain. This time I didn’t, but served it with couscous (takes only 5 minutes to cook), so dinner was ready in no time. When Jessica got a copy of Levana Kirchenbaum’s book, The Whole Foods Kosher Kitchen, she immediately sent me this recipe; she knew I’d been looking for ways to use up the meyer lemons I’d preserved this winter. I’ve been a lazy cook this summer, though, relying on old favorites and things that won’t heat up my apartment, so I didn’t make it as quickly as she thought I would.

I bookmarked a recipe for salmon sashimi in Food & Wine, because I eat raw fish at restaurants all the time, why not at home? So I went out and bought some super fresh salmon, excited about pairing my sashimi with some Sauvignon Blanc that Gary from Royal Wine sent me specifically for the dish…and I chickened out and cooked the fish!
I’ve been trying to incorporate more fish into my kitchen, and this fish is a good way to start. It’s easy, comes together super-quickly and it’s tasty; just what you’d expect from Ina Garten!
Technically, grilling season is almost over. But I’m not ready to start cooking inside just yet…you’ve never been in my kitchen in the summer. It is just too hot! So I spent a lot of the summer in the yard cooking. I figured out that meat and chicken aren’t the only thing you can cook on the grill. I decided to change it up a little and make some salmon using cedar planks I picked up from Whole Foods. I’ve never actually eaten plank salmon, and I don’t really like strong smokey flavors…talk about an impulse buy. But since I bought the planks, I had to try it. Turns out, the salmon was great! It wasn’t too smokey, but definitely tasted different and stronger than if it was just cooked in the oven. There was no fishy flavor, and the simple topping imparted the perfect amount of spicy sweetness. I’m definitely going to be using these planks a lot this grilling season. Continue reading
I was a little scared of this recipe, because ground up fish with crumbs, mayo, and lemon sounds a little bit gross. I tried it anyway, and I’m so glad I did! They were surprisingly amazing, something I would want to make in giant batches to impress guests for dinner, as an appetizer for a cocktail party, or even just a topping for a light salad for lunch. If you decide to make these for a little change of pace at your 4th of July party, they won’t disappoint. Just make sure to double the recipe!

Don’t have time to make a delicious fish dish? Think again! Cooking in foil or parchment paper is a quick and easy method, plus it’s very forgiving. I made mine with salmon, whole wheat couscous, veggies, and white wine. I got the idea from Alton Brown, obviously. He has a blackboard full of ideas on pouch cooking in this episode.
