Tiramisu Cake

It’s funny how some weeks can go by that I don’t feel like cooking at all, and then one day I’ll wake up and decide that I want to bake a cake with layers and icing and decorations. And while I’m baking, I’ll need to invite people over to help me eat said cake, so I’ll have to make a big dinner. In my tiny apartment. Did I ever mention that I have a miniature oven? Chicken Tinga Tacos

Have you ever had tinga before? I hadn’t until I made this. Basically, it’s shredded meat in a tomato-chipotle sauce.

I made these one Sunday to have dinner ready for the next day. Actually, that same Sunday I spent a lot of time in the kitchen. Do you ever do that, spend a lot of time in the kitchen on Sundays? I bet you do. I like to prepare for the week ahead, that way my time in the kitchen on weekdays after work is significantly diminished.

Hand-Picked Raspberry Jam

What better to do on a day off from work than go berry picking? The farm near us had two options: red raspberries or black raspberries. We chose the reds; they were cheaper.

Six pounds of berries later we headed home, ready to use our brand new canning equipment.
